Super simple, quick and satisfying.
- linguine pasta, 1lb
- fresh tomato, approx 1lb, sliced or whole cherry
- white onion, 2 medium size, sliced
- garlic cloves, 5-6 smashed
- extra virgin olive oil
- greek style strained yogurt, 1/2 cup
- smoked chili flake
- salt and pepper
Prepare pasta according to package instructions (9 min al dente). In the meantime, add large drizzle olive oil to large skillet. Add onions and garlic, sautee until softened/browned. Season with salt and pepper. Add tomato, don't toss too much so not to break down too quickly. When pasta is ready, turn off heat and transfer strained pasta into skillet. Add yogurt and toss everything to coat pasta. Portion in bowl, top with crushed smoked chili flake.
