Greek Honey Cabbage Slaw

- cabbage, 1 head thinly sliced 
- extra virgin Greek olive oil, 3 tbsp
- red wine vinegar, 3 tbsp
- greek honey, 2 tbsp
- poppy seeds, 1 tbsp
- Greek sea salt, to taste 
in a skillet, warm honey until fluid.  Whisk together with remaining dressing ingredients, pour over cabbage.  Let sit for about 10-15 min for cabbage to soften.  Enjoy, or portion and store in fridge up to 2 days.  Pair with warm pita!
