time: 10 min prep, 35-40 min to cook
1/2 white onion, minced
1 large clove garlic, minced
16 ounces yellow split peas, rinsed and drained
6 cups water
salt to taste
fresh scallions, thinly sliced for garnish
greek olive oil
plain greek yogurt
INSTRUCTIONS: in a medium sized pot, add first five ingredients. start at medium-high heat and get to a strong simmer (contents may foam up, so stay close by), then reduce to low heat and allow to gently simmer for about 30 min. if you see that peas still need to cook further or break down, raise temperature to medium-low and stir occasionally for 5-10 min. soup may be enjoyed gently smoothed by stirring with a spoon, or more pureed by using a hand blender for a rich, smooth texture. ladle into bowl and garnish with fresh scallions, olive oil drizzle and an optional dollop of greek yogurt.
GREEK TIP: don't be afraid to drizzle a generous amount of quality olive oil! it really makes the dish more authentic and it's what keeps us greeks kickin' for so many years..!
NOTE: soup will thicken over time. if you reserve any for the next day, you may also enjoy it cold, like hummus, as a smooth dip for vegetables or spread over warm pita bread.
