Stewed Green Beans
I'm a huge fan of one-pot meals, especially when they're loaded with filling vegetables. This dish is vegan and meant to be enjoyed as a main dish. You may also top with crumbled feta, a fried egg or enjoy as a side. Sop up with warmed pita!
- green beans, tips snipped
- onion, largely sliced/quartered
- potato, largely cut
- tomato*, fresh or canned
- garlic, smashed cloves
- extra virgin olive oil
- salt & pepper
*I keep bags of in-season, ripe plum tomatoes from the farmers market in my freezer all year long to use for pasta sauce or stews. Run frozen tomato under warm water for skin to peel off very easily. Simply toss into pot or skillet! The taste and texture is exceptional.
In a large, heavy bottom pot, layer all ingredients plus a heavy drizzle of olive oil, salt and pepper to your taste. Start temperature at medium-high to get it going, then turn down to low and allow to simmer until green beans are soft (approx. 1 hour). Stir a couple times, but not when potatoes become soft so they stay in tact. Enjoy!
